Tahini and parsley dip is a full of flavor Arab recipe that’s very popular in Israel. It is prepared by simply mixing fresh parsley, garlic, salt, lemon juice, water and tahini. And you serve it just as you would serve hummus. Dip a fresh warm pita into it and eat.

INGREDIENTS

  • 1/2 cup cold water

  • 1/3 cup lemon juice

  • 3 garlic cloves

  • 1 teaspoon salt

  • 2 cups Italian parsley leaves

  • 1/2 cup tahini

DIRECTIONS

  • Put the first 5 ingredients in a food processor or a blender and process until smooth. Add tahini and process for 2 minutes longer. Taste and add more water and/or lemon juice if you want tahini to be thinner (remember it will thicken in the fridge). Add salt to taste.
  • Keep covered in the fridge for up to 5 days.
