My latest piece for #roshhashana for @moment_mag is about the Stew (or Soup) of Seven Tastes, a dish that is traditional to the Nash Didan #Jewish community.
The Nash Didan * נאש דידן are Jews who for over 2,000 years lived in the mountains surrounding Lake Urmia in Iranian Azerbaijan. These Jews trace their presence in the region to the Babylonian exile, when Judeans were sent into what was then the Assyrian Empire.
Learn more about the community and their Rosh Hashanah stew that’s filled with symbolic ingredients.

This date and #honey cake is a great way to celebrate #roshhashana . Dates are among the Seven Species of the Land of #israel , and it's interesting to note that Biblical honey refers not only to bees honey, but in some occasions to date honey or even the dates themselves.
In this recipe, dates make for a dense and moist cake, while cocoa powder, chocolate chip and walnut intensify the flavors.

The ritual is structured around symbolic foods and their accompanying blessings, known as simanim (signs), which date back almost 2,000 years to the era of the Babylonian Talmud.

Have your #independenceday #bbq #israeli style this year. With sirloin and dried apricot shishlik skewers; lemony, sticky chicken wings; grilled eggplant topped with lemon juice, olive oil and plenty of herb; hummus; Israeli style pita bread and any other salads and veggies you like.

Ceviche - tabbouleh salad, here are two summer favorites, #ceviche is South American, #tabbouleh is Arab, and together they make one fun salad. And in a very Israeli manner the salad is drizzled with #tahini dressing on top. This combination is a good example of how the new Israeli cuisine works.

#Greek style baked #feta with sesame seed, nigella seed, olive oil and honey. This right there is the full recipe, btw. Put in 350 F oven for 10 minutes and you’re done.
The traditional version includes phyllo dough or a little flour, I just coat it in the seeds and I’m done. The most important thing is to get a really tasty feta. My favorite is @valbresoarabia sheep milk feta.
In time for #Shavuot but this is a recipe I make all the time.

This is a Seven species #tabbouleh Salad for #Shavuot
Tabbouleh is an Arab salad from the Levant, and it is always based on fine bulgur and plenty of chopped herbs.

Shavuot is the holiday of wheat harvest (bulgur!) and the holiday of the first fruit.

This version combines the classic salad with the seven species of the Land of #Israel (ok, at least six of them:) pomegranate, fig, grape (in the shape of balsamic vinegar,) date (in date syrup,) olive (oil) and the bulgur represents the wheat.

Burekas or borek, Turkey-originated savory stuffed pastries, is probably Israel’s most popular snack. You’ll find it as street food, served in coffee shops, sold by the kilo in bakeries and supermarkets and made at home according to generations-old recipes. Burekas is the favorite staple in any gathering, from high-level cabinet meetings to kindergarten birthday parties and anything in between.

They’re traditionally filled with grated salted hard cheese, spinach, roasted eggplant and meat. Potatoes and mushrooms are also popular in Israel.

My version here, with Swiss chard, sumac and feta, is inspired by Middle Eastern spices and produce, and it may look complicated, but it’s really east to make.

Israeli food writer and historian Pascale Perez-Rubin writes that in some versions, the challah is stuffed with dried fruit and nuts. According to Ronit Treatman’s excellent article on the subject, this tradition dates back to 8th century Spain, where Jews adopted the idea of decorated Easter bread from their Christian neighbors.

It’s a beautiful way to celebrate the holiday of Shavuot, and serve right next to a plate of blintzes and a cheesecake.
