Sweet potato and goat cheese Tarte Tatin

Upside-down tart, savory version.
Ceramic non stick pans can go in a 400 F degrees oven. If you don’t have one, use a cast iron pan instead.

INGREDIENTS

  • 4 tablespoons butter

  • ½ cup sugar

  • ½ tablespoon kosher salt

  • 2-3 narrow sweet potato, peeled and sliced to ¼ inch

  • 6 oz. soft goat cheese

  • ½ lb. puff pastry sheet, chilled

  • Green salad, for serving

DIRECTIONS

  • Oven to 400 F degrees.
  • Melt butter in a ceramic non stick pan on medium heat, then remove from heat. Sprinkle sugar and salt all oven the butter. Arrange sweet potato slices on top of sugar in circles, overlapping each other, to cover the pan.
  • Put pan back on medium heat and cook for about 13 minutes, until sugar has caramelized nicely. Remove from heat.
  • Crumble goat cheese oven sweet potato.
  • Put puff pastry sheet over goat cheese and tuck the edges of the pastry in.
  • Transfer pan to oven and bake for 18-20 minutes, until puffed and golden-browned. Transfer to a cooling rack.
  • Let pan stand for 10 minutes. Use a spatula to make sure all sides of pastry are released from pan. Put a large plate on top of pan, and use a towel to flip pastry into plate. Good luck! If some of the sweet potato got stuck to pan, simply transfer it to its right place on the pastry. Serve with green salad.
