Tahini dip

This sauce is wonderful on its own, as long as the tahini you’re using is of good quality. Simply taste the raw tahini and make sure it doesn’t have a bitter flavor to it. 

Palestinian brand Al Arz is my favorite tahini that is available in the US, try online and at some Kosher supermarkets.

Ingredients

  • 1 cup tahini (see note above)
  • 1/2 cup lemon juice
  • 1/2 cup cold water
  • 1/2 teaspoon kosher salt
  • 1 bunch Italian Parsley (optional)

Instructions

  1. Put all ingredients in a blender or food processor and blend for 3 minutes until smooth. 

    Keep in an airtight container in the fridge up to a week.

  2. For green tahini, roughly chop parsley and add to food processor with the rest of the ingredients.
