Fattoush is a Palestinian and Lebanese poor-man dish, using old pita bread to make a simple salad more filling, just like the Italian panzanella. And with both salads, the results are the some of the best Mediterranean salads available.
I added feta to this recipe, which is not part of the original one, so you can just omit it altogether if you prefer.
This may sound obvious, but the feta you choose should be really tasty. The flavor of the salad depends a lot on the feta’s quality, so make sure it’s a kind you like. There are many tasty Israeli feta varieties, at kosher markets and at Trader Joe’s.
Sumac is a crunchy sour spice that comes from Iran. It is available in Middle Eastern markets and some Kosher markets.
Pita, tomato and sumac salad (fattoush)

3 medium tomatoes, in ½ inch cubes
3 radishes, thinly sliced
½ red onion, very thinly sliced
½ lb. feta, crumbled
3 tablespoons freshly squeezed lemon juice
3 tablespoons olive oil
1 garlic clove, minced
1½ tablespoons sumac
3 oz. pita chips
DIRECTIONS
- Put tomatoes, radish, onion and feta in a large bowl. Add lemon juice, olive oil, garlic and sumac and toss gently. Add the pita chips just before serving, toss again and serve.
